I created this mouthwatering breakfast sandwich to accompany the launch of MKC’s new collection of culinary knives and accessories. You can whip it up anywhere, from your home kitchen to the great outdoors, and I guarantee it’ll be the best damn breakfast sandwich you’ve ever tasted.

Ingredients

4 thick slices of fresh sourdough bread

2 Tbsp. butter, divided

1 small onion, diced

1⁄2 red bell pepper, diced

2 small potatoes, diced

8 oz. sliced mushrooms

1 jalapeño, minced
-
2 Tbsp. chopped cilantro (optional garnish)

6 oz. sharp cheddar cheese, shredded

2 ribeye steaks (6–8 oz. each)

Salt and black pepper, to taste

2 eggs
Directions
Place a cast-iron skillet over a hot fire and melt the butter.
Add the onion, bell pepper, potatoes, mushrooms, and jalapeño. Sauté for 5–7 minutes until potatoes are fork-tender.
While the veggies cook, butter the bread slices. Season the steaks with salt and pepper. Place steaks and bread in the skillet next to the veggies.
After 2–3 minutes, flip the steaks. Remove the bread. Add cheddar cheese to the veggies and stir until melted.
Once the steaks and veggies are done, transfer them to a plate and cover to keep warm. Add the remaining butter to the skillet and fry the eggs sunny-side up. Slice the steaks into thin strips while the eggs cook.
Place one steak on a slice of bread. Top with half the cheesy veggies, one egg, and a second slice of bread. Garnish with cilantro.
If you’re feeling ambitious, make it a double! Otherwise, assemble a second sandwich.
Dig in while the cheese is melty and the bread is toasty. (And try not to dislocate your jaw.)
